(A/3')(FS/PS) In ancient times borage was thought to have the ability to bestow happiness and comfort upon a person and drive away melancholia. Borage has long been associated with courage, probably due to the fact that it contains large amounts of potassium in the form of nitrate of potash, which stimulates the adrenal glands. The tender leaves and flowers have a mild cucumber flavor which make them great for salads. The bright blue, star shaped flowers make a beautiful edible garnish and are candied to decorate cakes, desserts, and fruit salads. We add borage leaves and flowers to salad burnet, dill and garlic to make one of our favorite herb vinegars. Easy to grow.
