When grown in cool weather, this plant will form a large bulb at the base. The entire plant offers a pleasantly mild anise flavor and delicious crisp juiciness, it can be chopped and added fresh to salads, cooked as a vegetable or blanched and marinated to use in antipasto. The leaves and seeds are also anise flavored and used in soups, salads, cookies, sauerkraut, and dressings. Traditionally considered one of the best herbs to use with fish dishes.
